The Second Day

I am doing South Beach. It's really the second time I've attempted it, but I sort of got off track the first time because of some things that came up and I had to go out of town and blah blah blah - I just failed. There. I said it. I FAILED.....the first time.

Thank God for second chances.

I went home last night and made some chicken salad and some little quiche things a friend who's done SB before told me about. They were quick and easy and I was able to make some up last night and put them in the fridge for quick reheating this morning. You could do all types of variations with them I think - adding veggies and maybe sticking to an egg white instead of the whole egg. Here's the recipe in case anyone is interested.

Cup of Bacon and Egg
Per serving:
1 Tablespoon prepared crumbled bacon
1 egg
1 T grated cheese: cheddar or Monterey Jack or other favorite
Preheat oven to 350. Spray a muffin pan with butter flavored cookie spray. Place crumbled bacon in the bottom of each muffin cup. Add egg and pierce the yolk once with a fork. Sprinkle cheese on top. Bake 20 minutes until slightly firm.

These really are tasty and one of them is quite filling, at least for me. That's the great thing I've noticed when cutting carbs. I'm NOT hungry. I usually have to remind myself to eat my morning snack. The only time I start wanting to eat is in the afternoon around 3. I eat an early lunch so by 3 or so I'm ready for something GOOD. I am blessed to work in a very small office so I'm able to pull out my snack about 10 in the morning and then around 3 in the afternoon.

My biggest temptation on this diet isn't the food (well, isn't ONLY food I'm not supposed to eat) but to weigh every day. Doing that affects my focus and shifts it from working on attaining a healthier lifestyle to "How much weight have I lost today??" I try to keep the scales put up and weigh only once a week.

Today is day two of my lifestyle change. So far, so good.
