Salmon recipes
SALMON, as we've all heard by now, is very good for you and heart-healthy. May I recommend the following for anybody who has ever said they don't like salmon! The trick is to start with the "right" salmon!!
Sam's Club, Jackson: Front of freezer section.... "C. Wirthy & Co. Center Cut Atlantic Salmon" - about 7 fillets, individually sealed and frozen, completely skinned and boneless (no bones yet, and I'm on my fourth bag), beautiful pink with absolutely NO FISHY smell.
Also at Sam's: Tone's Salmon & Seafood Seasoning; also, Durkee Grill Creations "Citrus Grill' Seasoning (I found them in 18 and 20 oz. tall, plastic flip-top containers - great on veges, etc., too). Tony Chachere's Lite Creole Seasoning is another option. Salmon is a light-tasting fish, so you don't have to overdue it when seasoning.
I like the light taste it gives, so I squeeze a little lemon (FRESH ONLY!) on the salmon before I sprinkle the seasoning!
Grill, oven, and microwave directions are given along with other good cooking tips on the back of the bag. It is so true about not overcooking salmon, so test for suitable doneness before it is dried out! These filets are so uniform in size, I can put one in a little dish which is coated with some spray Mazola Canola Oil and know it will be done in 15 to 18 minutes, maximum, at the recommended temperature.
These fillets are pretty enough to serve for company and can be prepared any number of ways. Enjoy!
